Sarah's Grain free Granola Recipe

Ingredients:

1 cup raw cashews, roughly chopped

1 cup raw walnuts, roughly chopped

1 cup shredded coconut

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1 tsp nutmeg

2 tsp cinnamon

1/4 tsp cardomon

1/4 c melted coconut oil

2 ripe bananas, mashed

2 tbs honey

2 tsp vanilla extract

 

Method:

Heat oven to 180 C and line a large baking tray with baking paper. In a large bowl combine dry ingredients; in a smaller bowl mash the banana and then stir in wet ingredients. Pour the banana-oil mixture into the granola mix and stir well to ensure it is all coated. Spread on your prepared tray and bake about 30 minutes; about halfway through take it out and give it a toss around so everything bakes evenly to a honey brown colour.
